Learn with me: Making Laba porridge
Enjoy Flash here.
Laba porridge is also known as Five Flavors porridge or Seven Treasures
porridge. Obviously, the success of this dish depends on its ingredients and
flavor.
In Beijing,
Laba porridge is traditionally made by first rinsing glutinous millet, white
rice, millet, water chestnuts, unhulled millet, red cowpeas, and red jujubes to
remove any dirt or grit. These basic ingredients are then simmered together over
low heat until done. Shelled walnuts, almonds, melon seeds, peanuts, pinenuts,
hazelnuts, raisins, white sugar, and brown sugar are then added to taste,
creating a delicious and visually appealing holiday treat. Some family carve
miniature likenesses of people or animals out of red jujubes or shelled walnuts
to put in the Laba porridge, adding even more festivity to the holiday
celebration.
