Nobody knows when kouweixia (a kind of shrimp), made by an old lady in
Nanmankou, became the most famous Changsha dish. In this dish, the shrimp is
quickly fried with pepper, anise, fennel, garlic, ginger, and cooking alcohol. A
big basin of these red shrimps in such loud colors will without a doubt make
your mouth water.
Another popular dish is called fenghuanchao (phoenix coming back to the
nest). After the whole chicken is steamed, it is circled with boiled eggs and
then steamed again with cabbage, mushroom, and black fungus, and then seasoned
with ground pepper. This dish is an indispensable course of lunar New Year's Eve
dinners because its shape and name symbolize family reunion.

Northwest China's Xinjiang Uygur Autonomous Region has vast grassland, so
animal husbandry is the main industry there. Hence it is natural that meat is
the main course on the table of Xinjiang people.
Xinjiang people always choose roast meat to entertain their guests, and with
portions ten times bigger than that in Xi'an. It is a wonder how they can eat
such a big portion! The boiled mutton, which is eaten with the hand, is put on a
big plate about 50 centimeters in diameter.
