Even self-professed chicken haters may change their taste in Guangzhou, whose roast chicken has crisp skin and tender flesh and thus a good taste. Actually, there are many other ways to cook chicken in Guangzhou. One of them is called hongcongtoulaoji, in which chicken is cut into pieces and then steamed with red onions and soy sauce. Another dish is called zhenweiji, where slices of boiled chicken are served cold with soy sauce and slices of cucumbers.

Some inconspicuous restaurants, though not well decorated, offer home-style dishes and charge as much as high-class restaurants. That does not stop them from having a flourishing business.
