Pleasures of the Table in 10 Cities
In Xi'an, the traditional way to entertain a guest is to serve a big bowl of
pig head meat and two bottles of liquor. "Eating big pieces of meat and drinking
alcohol from a big bowl" are considered as things a man should do.
Old Sun Family's Paomo (steamed bun soaking in mutton soup) restaurant is the
most famous restaurant. Although the price here is twice as high as that in
other restaurants, the taste is not necessarily better than others. However, the
local people usually invite the guests from other places to this restaurant for
dinner because Xi'an people care a lot about their face. They cannot bear to be
considered mean.
The men in
Xi'an say they cannot live without noodles. They think that eating noodles can
make them look strong and rustic, the way a man should look. They have many
kinds of noodles such as beef noodles, Qishan noodles, and dip noodles.
