of a new star, the French food critic Anthelme Brillat-Savarin asserted in one
of the most celebrated works on food, Physiologie du Gout (Physiology of Taste).
In our taste for travel, we always acquaint ourselves with a strange place
though the pleasures of its table, according to the phrase: "Tell me what you
eat, and I will tell you what you are." So with that in mind, here is a tongue's
travel of 10 cities in China.
